Ingredients:
- 1 packet of CHOCOLATE TEULES, TRIAS biscuits
- Cacoa powder
- 1 coffee
To prepare the curd mousse:
- 250ml of milk
- 50gr of sugar
- 10gr of cornstarch
- 2 egg yolks
- 250gr of curd
- 125ml of cream
Preparation:
- To make the curd mousse: Dissolve a portion of the milk with the cornstarch and set aside. Bring the rest of the milk to a boil with the sugar. Mix the yolks with a few bars gently. When the milk boils, place it gently on top of the yolks and continue stirring. Put this mixture together with the cornstarch again over low heat. Let it thicken.
- Once it has thickened, remove from the heat and wait for it to cool for 5 minutes, then add the curd.
- Reserve and cool.
- Once cold, whip the cream to the point of snow and cover with the cream. Put it in a sleeve and set aside in the fridge.
- Make the assembly by painting with coffee, then put the curd mousse as in the photo with the help of the sleeve, close with another chocolate teula moistened with coffee and finnish with more curd mousse and cocoa on top.
